Pandora’s Healthy Chocolate Nachos

These “nachos” make a festive party dessert for the holidays.  They’re yummy, easy and fun, and more nutritious than many of the holiday standards.

    12 Food Should Taste Good Chocolate Chips (These are tortilla-style chips that have added cocoa.  They are not at all like semisweet chips and are not sweet.)  Or your favorite tortilla chips.

    Pandora’s Miracle Low-Fat Sauce (Recipe below)*

    12 mini marshmallows
    2 oz. pecans, almonds, pistachios &/or walnuts, coarsely chopped
    2 oz. dried cherries, blueberries, cranberries, or whatever dried fruit you like.  You may even use dates.
    1 oz. white chocolate, grated

Arrange the chips on a microwaveable plate. Put a half teaspoonful of sauce on each chip then arrange some dried fruit and nuts on each chip. Add a marshmallow to each chip and sprinkle grated white chocolate over all. Microwave for just 10 to 15 seconds, or heat them under a broiler for about a minute, just to puff up the marshmallows.  In either case, watch carefully to make sure the marshmallows don’t explode or get over browned. Serve immediately

Banana Avocado Yogurt with Chocolate Chunks

This may sound like a strange concoction, but it is the creamiest, most refreshing summer treat!

Serves 6

You will need an ice cream freezer, or individual freezer mugs.

    2 cups plain low-fat yogurtjuice of 1 lime
    1 large ripe avocado1 teaspoon pure vanilla extract
    1 large ripe banana3 oz. dark chocolate chips (70%)
    ˝ cup sugar

Chill all the ingredients well.  Peel banana and avocado and put in a blender or food processor along with all remaining ingredients, except for chocolate chips. 
Pour the mixture into ice cream freezer, or freezer mugs.  Add the chocolate chips last and stir slightly.  If you are using freezer mugs, make sure they are well frozen before you start.  Divide the chocolate chips evenly between the mugs. In lieu of chocolate chips, you may use a good quality dark chocolate bar cut into small chunks.
